The NOMA fermentation projects pop up at USQ in 2023 (or was it 2024?!) totally convinced me. I quietly cut out of work that day to go stand in line. So delicious.
I’m going to check out this coffee situation. Also, since you’re clearly a hot head like me, you absolutely MUST get your hands on Mama Teav’s hot garlic. It’s better than crisp IMO because who wants flakes stuck in your teeth when you could have perfectly cooked, crispy garlic crunchies swimming in bright and hot oil? I literally put it on everything and their founders Christina and Anthony Teav started the company to honor their mom’s OG recipe and legacy as a Cambodian refugee.
Great list! Le Buerre Bordier is SO good. I did a butter tasting in Paris this summer and that was my favorite. I'll have to give the Algae Cooking Club Oil a try, I've been looking for a new cooking oil
